I topped these strawberry cupcakes with lime green margarita buttercream and a fresh strawberry wedge. I fold frozen concentrate margarita mix to my buttercream recipe.
I am stacking 2 pineapple upside-down cakes together, filling and icing them with cream cheese icing. The batter is super moist and laced with crushed pineapple. This deluxe version of a classic is a definite crowd pleaser.
